Harvest details: Hand picked in cases in the second week Bunches are selected in the vineyard.
When the gapes arrive to the winery they are send to the press. Pressing until 600 milibars. 90% of the wine ferments in stainless steel tank for 16 days of at 14 °C.
10% of the wine ferments in first use medium toast French barrels for 24 days at 16 ºC
After the fermentation the wines rest in the barrels for 10 months, with weekly batonage.
